It was my birthday on Easter Sunday and, thanks to technology, I had a very good day.

I had hundreds of birthday greetings ping on to my Facebook and Twitter pages. This made a huge difference to my day. With the absence of physical contact, these messages had a massive impact. I urge you to use social media like Facebook to interact and if someone has a birthday to take two minutes to say hello.

There is Zoom now too. You can download the App and easily have get-togethers from your home. For my birthday we had a Zoom quiz night with my girls and other family, and the previous evening had a Zoom dinner date with my uncle and aunt too, so I really recommend Zoom, it helps us stay in touch.

I have been very busy this week, my oven was working flat out. I volunteered to help with CGCC Covid – 19 Community Workforce. Organised and run by Calder Grove Cricket Club, we support people of all ages who are struggling during this difficult time. Everything is done while adhering to social distancing guidelines, and my role is to bake for the meal’s delivery service.

Initially the biggest challenge was to think what to make from the donated ingredients available. However, people have started to donate cash which means we have a budget to buy ingredients too. Today I will be making a version of bread and butter pudding using donated hot cross buns. I will be making real ‘from scratch’ custard too as I have eggs on their use by date. I have never made a bread and butter pudding before, so watch this space!

Tributes paid to "kind and gentle" Leeds nurse who died from coronavirus

I said last week how anyone with a garden needs to make the most of it as so many do not have outdoor space. I was very lucky, my mum arranged for a delivery of plants from Hall Green Nurseries for my birthday. The nursery is closed, but she called them up, put a cheque in the post, and I got an array of colour delivered on to our drive. The garden looks very nice and I will be sitting out enjoying it until our situation changes.

Next week I will write a recipe for my column, I have a delicious chicken in mushroom and white wine sauce recipe - or how about a spicy goulash?

Take care everyone, #staysafe and #stayhome until next week. www.karenwrightbakes.co.uk
