Restaurant set to show its alter-ego in Headingley

One of the city’s favourite and long established restaurants is embracing modern Mediterranean dining with the region’s first Italian tasting menu.

Salvo’s of Headingley has created a new Alter Ego dining experience which is an eight course tasting menu blending the best of ingredients from Yorkshire and Italy.

It will be served in Salvo’s Salumeria on Friday and Saturday nights and is the brainchild of Salvo’s head chef Oliver Edwards who worked alongside owner Gip Dammone to devise dishes which combine both their heritages.

To help inspire him, Mr Edwards toured through the home of the Dammone family in Southern Italy and visited Italian food producers, including a buffalo mozzarella farm. He said: “Alter Ego is a bit of a departure for us as although it has its heart in classic Italian cooking, it takes it up a level into a contemporary eating experience which should really excite people.“Italians are obsessed with the quality of their ingredients and they allow those individual components to make simple dishes that are a taste sensation. We have incorporated some amazing ingredients into the dishes from both Yorkshire and Italy including Amalfi lemons, British veal, Gorgonzola Dolce and Yorkshire Rhubarb.”

Ravioli

The menu will change each month and for April it features Gorgonzola mousse with walnuts, tomato and buffalo mozzarella caprese, British rose veal tartare a black pepper pasta dish served in a ravioli. The main course will be pig cheek with traditional Italian sweet and sour sauce.
