Over the summer months, Dough Bistro in West Park has been undergoing a revamp and from tomorrow foodies, families and fans of proper cocktails can enjoy relaxed Italian-style dining with a very Yorkshire twist.

Aperitivo is the new venture from the city’s power couple of cuisine, Luke Downing and Laura MacLeod and will be on the doorstep for food and drink fans in Headingley, Kirkstall, Chapel Allerton and Horsforth.

It combines their vision for fine food, local produce and a little bit of what they do when they step out of the kitchen.

Mr Downing said: “It got to the point where we needed to do something that re-ignited our passion and re-invented it.

“So we thought not ‘what is in trend’ but what do we like and let’s do it. We are not trying to take on Salvo’s or say it is authentic Italian but put our twist on that type of food.”

By that he means dishes
such as Venison Pappardelle which is slow cooked venison with ragu sauce, mozzarella and beetroot croquettes and vegan meatballs which are lentil, onion and garlic with marinara sauce.

Rather than get as many diners through in an hour as they can, you can have the table for four hours if you wish, bring the kids, have a drink and snacks before the main meal.

The former bar manager from Gino D’Acampo’s restaurant is mixing the cocktails which are also hand-bottled to enjoy at home.

Mr Downing added: “We want people to make their own dining experience and that is a bit more unusual to how people dine in this country. We are coming out of a recession and people want to go out again.

“Families can come, those having a drink before town or if you want bits and pieces – we are hitting every demographic.”
