Harrogate-based Slingsby Gin has collaborated with Michelin-starred restaurant The Man Behind The Curtain to create a bespoke gin using Yorkshire botanicals and some other, more unusual, ingredients such as plankton and Exmoor caviar - in a bid to capture the elaborate and distinctive style of Leeds city centre eatery.

The restaurant, fronted by Michael O’Hare, will be pairing the gin described as savoury, unique and deliciously bold with Lillet-Blanc as a Classic Martini, Vichy Catalan Tonic as a gin and tonic, and will served up as a semi-fredo with lemon. To further exaggerate the flavour, the gin is being served with a spoonful of caviar.

It is priced at £100 per bottle and a very limited number of bottles will be available to buy from the restaurant on Vicar Lane.

Mr O’Hare, who has appeared on The Great British Menu, said: “It’s been extremely fun to work with Slingsby Gin. Their product is already top quality and it was nice to have the opportunity to put our own stamp on it, and cannot wait for our customers to try it.”
