Tattu leaves a lasting taste with the Leeds restaurant's new spring menu

Sweet and sour but not like you might know it.

If you are wanting deep-fried duck in orange sauce and a carrier bag full of prawn crackers this Chinese restaurant is not for you.

However, if you want to be shocked and enjoy food that has attention to the most minute detail (who has been served Har Gau with a syringe in it before?) then the new menu at Tattu on East Parade in Leeds city centre will put a spring in your step.

The surroundings are delicately decadent and the food is very much of the same ilk. Seventeen new dishes feature on the menu to mark the changing of the seasons and City Buzz tasted a few.

Wagyu beef

SzechuanSeabass with chilli beans, Shaoxing wine and spring onion

Dim Sum starter plates feature Seabass dumplings wrapped and pressed in the perfect shape, I am told there are more chefs working on prep than pretty much anything else, and Har Gau with XO or NO – this means you can literally inject as much of the spicy seafood sauce as you like using the pipette. Wagyu Steak was a revelation. Raw as it comes but amazing flavour and texture with a citrus hit to contrast.

Mains might be Szechuan SeaBass or Sweet and Sour Iberico Pork which, despite the pineapple, banana shallots and dragon fruit base, was probably the closest thing to stereotypical Chinese food you’ll find on the menu and sides we were dished up with was tasty rice but far removed from the egg fried grease you might have had before.

There was X.O rice and Pak Choi with shallots, shrimp, scallop and pancetta and to finish the dessert is the ideal balance when you need a light sweet hit. Baked Lotus Flower is served with a lemon meringue, honey and plum.

Oh and the new cocktails – definitely not delicate.

A new list has been created especially for summer and you'll only need one to know about (not skimping on measures here).

The Tattu twinkle

For City Buzz it has to be a Tattu Twinkle - Champagne delicately balanced with Vanilla, Elderflower and Lemon or a Cherry Negroni - where Tattu’s famous cherry trees come to lifewith a mix of Gin, Cherry Blossom Vermouth and Campari.
