They are the tasty, low calorie confectionery delights taking the country by storm - and created in the back room of a village bakery in Rawdon, once the bread-making shift is finished.
Enterprising duo Oonagh Simms and Kim Galloway - AKA ‘The Marshmallowists’ - appear to have successfully tapped into the ‘sweet treats’ market with their beautiful, handmade creations.
The pair, who met in a London bar and bonded over their love of baking, went into business and just over a year later have secured major deals with retailers such as Harvey Nichols.
They also boast a celebrity fan base including Fearne Cotton, chef Tom Kerridge and Paul Hollywood, who invited them to appear on his BBC1 show Pies and Puds.
TV fame beckoned again recently when they appeared on The One Show, to create a vegan marshmallow for top rocker Bryan Adams.
Nine months ago they moved the baking operation out of a friend’s London kitchen and back to Rawdon, where Oonagh - a former Menston St Mary’s pupil - grew up.
The 24-year-old - who spent four years in Paris as a chocolatier - approached Rawdon Village Bakery owners Glen and Helen Wilton to use their equipment - a move which has allowed The Marshmwallowists to really take off. Oonagh said: “Glen and Helen were exceptionally wonderful - the nicest people you’ll ever meet.
“They said we could use it when they’re not using it and he works through the night, from 10pm to 7am. So I get fairly good working hours!
“It’s allowed us to expand exponentially. It means we have a lot more space and have upped our output quite considerably.”
They sell their treats every Saturday on a Portobello Market stall, as well as various delis and online. They have a selection of core flavours but also create special flavours for events. Oonagh believes their popularity is due to an appreciation of the work involved in handmade treats. She said: “A lot of time and effort goes into them. I think it’s more indulgent if you have something that’s really beautiful.”
Marshmallows are completely fat free and are comparitively low in calories, made by mixing fruit juices with glucose and gelatin.
