A new rotisserie restaurant is hoping to rule the roost in Leeds’ dynamic dining scene.
The Bird and Beast, at Central Arcade in the city centre, has been opened by top Yorkshire chef Simon Shaw.
Mr Shaw, chef and owner of Michelin award-winning ‘El Gato Negro’ in Ripponden, previously worked as executive chef at Harvey Nichols in Leeds before going to London to work as head chef at their restaurant in Knightsbridge.
His new venture back in Leeds sees locally-sourced free range chicken – from Sykes House Farms in Wetherby – take centre stage on the menu.
Mr Shaw, 49, said: “Working in restaurants for over 35 years I found that chicken is really taken for granted and underestimated as an ingredient.
“Bird and Beast is a wonderfully simple concept where we aim to deliver simply wonderful chicken to Leeds diners.
“We’ve taken the popular British staple of chicken and chips and elevated it to the next level.
“It’s high quality flavour without any fuss. We’re confident the restaurant will be received well by diners in the city.
“It’s a fantastic location in the heart bar scene, just a stone’s throw away from Call Lane and bars such as The Maven and Outlaw’s Yacht Club.”
The new restaurant, which caters for up to 100 people, offers double-marinated chicken, which is steamed and then finished on a custom-made British rotisserie.
The rotisserie, which is a main feature in the restaurant, can slow cook up to 30 chickens over cherry wood chips and charcoal.
The restaurant also serves sirloin and belly pork roast dinners on Sundays.
Mr Shaw also plans to open an adjoining bar, called ‘Bird and Beats’, in the Autumn.
