SEA BASS WITH BLACK OLIVE SALSA AND BABY COURGETTES/ZUCCHINI
"This would be a good date dinner. On my 30th birthday I had sea bass cooked for me and served in the garden, surrounded by twinkling candles and a whole lot of love," says Sophie.
(Serves 2)
ingredients
2 sea bass fillets
Olive oil
Juice of 1 lemon
Salt and pepper
6 baby courgettes, halved
For the black olive salsa
250g/1 cup of pitted black olives
150g/1 cup of cherry tomatoes, halved
A handful of fresh chopped basil and dill
Juice of 1 lemon
Half a red chilli, deseeded and chopped
60ml/ cup of olive oil
1 lemon, sliced, rind and pith removed, to garnish
method
Preheat the oven to 190C/170Cfan/Gas 5. Marinate the bass in a mixture of olive oil, lemon juice and salt and pepper for about 20 minutes.
In a mixing bowl, mix the olives, tomatoes, chopped basil, dill, lemon juice, red chilli and olive oil. Put to one side.
Slice the courgettes lengthways, season and splash with olive oil, then bake in the oven for 20 minutes.
Pan-fry the bass in some hot olive oil, cooking it for two minutes on each side. Add the bass to the plates and top with the black olive salsa, serving the baby courgettes on the side, sprinkled with extra dill and lemon slices.

Lotherton Hall will be swinging into the sixties tomorrow with a free picnic party in the grounds of the estate.
The event will feature a live band playing hits from the 1960s, the Yorkshire-based Rooster brewery bar, community stalls and games.
The costume galleries will also be showcasing an exhibition called Fashion Revolution: British Style of the 1960s and 1970s which includes iconic costumes by famous British designers of the era, such as Mary Quant, Ossie Clarke, Zandra Rhodes, Celia Birtwell and Janice Wainwright.
The house will also have plenty of activities including story telling and face painting.
The event will take place from 12.30pm-4pm with music from 1pm-3pm.

How to do it
Try and press one arm up and then switch to the other. Turns palms inwards to work the backs of your arms more effectively. This is a great exercise for those newly named bingo wings. Try doing 2 x 20 quickly.

The Panics
Cruel Guards

"We need a few new frontiers to try to start making a little impact," Panics' frontman Jae Laffer told one Australian interviewer recently.
"We just want to make sure we grow old knowing we gave everywhere as much of a chance to get to know who we are as we do here at home."
Cruel Guards, the Perth quintet's first British release, should certainly see them making new friends here.
Originally released in their homeland in 2007, it's an intelligent and tuneful album that's reminiscent of fellow countrymen The Triffids (authors of Bury Me Deep in Love, which soundtracked Harold and Madge's wedding in the soap opera Neighbours).
Lead single Don't Fight It is underpinned by a lovely trumpet riff, Creaks is a catchy acoustic rocker with added handclaps, while the title track dryly observes: "It's always calm before you do me harm".
Best of all, The Panics make no attempt to sound British or American. This is strikingly Western Australian music, conjuring up images of heat and deserts and wide-open roads.
