BURNING SPEAR

Marcus Garvey/Garvey's Ghost

WINSTON Rodney, aka Burning Spear, is one of the enduring figures of Jamaican reggae.

Born in Saint Ann's Bay, in the north of the island, in 1948, he took inspiration from Rastafarianism and the town's great political hero Marcus Garvey, founder of the black nationalist movement the Universal Negro Improvement Association and African Communities League.

Legend has it that it was Bob Marley, also from Saint Ann, who helped launch Winston's musical career, by introducing him to Clement Dodd, producer of the famous "Studio One sound".

Initially part of a vocal trio, Rupert Willington and Delroy Hinds, Rodney recorded a number of singles and two albums before moving on to work with the producer Jack Ruby and the band the Black Disciples on the 1975 masterpiece Marcus Garvey.

A record that asks searching questions about European colonialism and the brutality of the slave trade, it featured a stellar cast of sidemen including Robbie Shakespeare, Aston 'Family Man' Barrett and Earl 'Chinna' Smith.

A companion 'dub' (or instrumental) version was released in 1976. The same year Rodney split the group.

He continues to record – as Burning Spear.

His most recent album, Jah is Real, won a Grammy.

Sometimes you just don't feel like exercising – but your lack of motivation could be down to something as simple as what you wear.

Chargrilled chicken, fennel and grapefruit salad with a tarragon dressing

This is an elegant, yet healthy starter that is perfect to pull out for guests and family. The citrusy grapefruit brings out the flavours of the fennel and tarragon, and gives the chicken a refreshing boost, says Sophie Michell, TV chef and author.

Serves 2

Ingredients

2 free range chicken breasts

1 head of fennel

1 grapefruit

1 head of little gem lettuce

Handful of washed rocket leaves

Dressing

25ml white wine or tarragon vinegar

75ml olive oil

1 tbsp chopped fresh tarragon leaves

a shallot, finely diced

1 tsp honey

Sea salt and pepper

Method

Firstly heat up a griddle pan. Take the chicken breasts and lie them flat on a board.

Open them out and then cut a slit down the side to open them more into a butterfly shape (this is called butterfly cut chicken).

Brush with olive oil and season on both sides. Lie on the griddle and cook for 5 minutes on each side until cooked throughout with good chargrill lines. Then pop onto a plate and cover with foil.

Cut the fennel into about eight wedges, drizzle with oil then cook on the griddle pan. This should take about eight minutes or until you can feel the fennel softening.

For the rest of the salad it's simple: peel and cut the grapefruit into segments and trim and break the little gem into leaves.

To make the dressing, just mix all the ingredients together well. Then dress the lettuce leaves with some and save some for drizzling over after.

Finish the salad by cutting the chicken slices and laying on each plate with the lettuce, rocket leaves, fennel and grapefruit.

Give another good drizzle of dressing and serve.
